Throwback Brewery – Spicy Bohemian is back, Chef’s Whim, Restaurant update, and more!

Updates from our Head Brewer

The biggest news from the brewhouse is that over the past several months we have transitioned from our small, 3-BBL brewhouse that I cobbled together myself, to our brand new 15-BBL brewhouse. There are plenty of benefits to the new system, including better hop utilization and a closed boil that better captures the flavor in the beer. Just wait til you try the wit coming out in a few weeks- the orange peel really pops!

In terms of what we have on tap now, first, let me start off with Spicy Bohemian. Yes, it is back! The peppers were added to our Love Me Long Time Pilsener base. This batch of Pils came out super crisp and refreshing, making the Spicy just as refreshing and drinkable – but with a kick!

Another fan favorite- Donkey-Hote Double IPA – was kegged up yesterday and now available on tap. We are also super thrilled with this batch – it is juicy, citrusy, and, yet, extremely well balanced.

Besides Donkey and Spicy, we have Hog Happy Hefeweizen, Dippity Do brown ale, Hank’s Pale Ale, and Hopstruck Red IPA on tap. Maple-Kissed Wheat Porter will be ready tomorrow. And, in the fermenters we have a Wit that we will split and add local peaches to one half and then beets to the other half (to make Just Beet Wit).

Coming up over the next several months, you will see bottles of Figgin’ Forty – our chocolate fig baltic porter, barrel-aged Gourdgeous Pumpkin Ale, and, by year end, cans of Spicy and more!


Rocking and Rolling at Hobbs Farm

Hello, everyone! We just noticed that we haven’t sent out an email update since May. Oops. 🙂 As most of you know, we have been super busy launching the restaurant at Hobbs Farm and getting our new 15 BBL system up and running. It has been a ton of work, but also so much fun and deeply rewarding at the same time. We would like to sincerely thank all of you that have supported us in our move and have given us many warm reviews about the food and ambiance at our new location. We put a lot of time and love into this place, and it means so much to us to see so many of you enjoying this space with your friends and families.

If you haven’t been to the restaurant yet, we would love for you to visit! You can find our latest, seasonal food menu here. We also do several unique and tasty specials a week. Sunday’s are Chef’s Whim, which you can read about below. For a bit more on our food and space, you can check out the great writeup that came out yesterday in the local paper.

At our new space, we are also open longer hours now – Wednesday and Thursday nights 4-9pm, Fridays and Saturdays 11am to 9pm, and Sundays 12-7pm. You can fill you growlers during any of those times, or stop by and have a pint. As we bring on more staff (like dish washers), we will expand our hours even more. Chef’s Whim – Let’s Get Spicy!

We feel pretty lucky to have landed such a talented chef as Carrie Dahlgren. We feel even more lucky that on Sundays she exercises her creativity and artistry with something we call Chef’s Whim. On Sundays (12-7), Chef Carrie adds several new and inventive items to our menu, all under a unique theme. So far we have had themes such as ‘Breakfast for Dinner’ (with House made Breakfast Sausage Egg Sandwich,

Eggs Benedict- Hobbs Farm Style – with freshly made english muffins, and Spent Grain French Toast with native Blueberry Maple Syrup.) One of our recent favorites was ‘Fun on the Bayou’ with golden fried beignets, house made smoked andouille sausage in a soul warming gumbo, and comforting, cheesy shrimp & grits.

Since we just released the latest batch of Spicy Bohemian, the theme this Sunday, Sept 13th will be ‘Let’s Get Spicy’. So far, we know we are doing the following (there may be more! :):

Jalapeno braised pork empanadas with smoked corn salsa
House smoked brisket, sweet corn cheesy grits, jalapeno jam, sliced tomatoes.

Trust us when we say that these inventive dishes are worth a Sunday trip!

Upcoming Events and other fun happenings

The impending Fall means a few things, including lots of beer fests, and, fresh hops! The small amount of hops we harvested from our burgeoning hop yard will be used this year in casks that will be served in both our pub and at the Coat of Arms in Portsmouth, NH. Stay tuned for an email or to Facebook / Twitter for more details on that.

In terms of events, we will be at the sold out Passport event at Strawbery Banke on September 19th. We will pair our Peach Wit with a house-made smoked chicken boudin (sausage). On September 20th, we will be at the Heirloom Harvest Barn dinner with both beer and an appetizer. The 20th at 1pm is also our next book club meeting, where we will be reading Fun Home by Alison Bechdel.

Finally, in September, we are beginning to book up for private events. So far we have booked everything from small family celebrations to larger birthday parties, baby showers, corporate events, weddings and more!
